Making a 21st birthday cake?
I'm making a 21st birthday cake for my daughter using a sponge base, buttercream filling, marzipan and royal icing. How long before the party can I cook the sponge? I would like to give myself as much time as possible to get the fine decorating right. I've never done anything as special as this before and have started making my own sugarcraft flowers and butterflies for it. The party is on the 12 Sept. I know rich fruit cake would last longer but we don't like it much. Is there anything I can add to the sponge to make it last a bit longer? I usually use a basic sponge mix with fresh lemon juice (great tip to make the flour rise more it reacts with the bi-carb in self-raising).

Sponge does go stale quite quickly so i would only make it 2 days MAX before hand....ideally make it the day before
